PIE RECIPE for Tidymom blog







PEACHY BLUEBERRY CRUMBLE PIE

I use a homemade pie crust for the bottom but you can most certainly use pillsbury already made shells.

4 cups of fresh/frozen/sliced peaches
1 cup fresh/frozen blueberries

Mix 3 tablespoons cornstarch, `1/2 tsp lemon juice, 3/4 cup granular sugar, 1/2 tsp salt add fruit to coat.

Now mix the crumble:
1/2 cup flour, 1/2 cup brown sugar, 1/3 cup old fashioned rolled oats, 1/2 cup chopped nuts (optional), 1/2 tsp cinnamon, 1/4 tsp nutmeg, 4 tablespoons soft butter, 1 tsp almond extract.
mix together til crumbly.
Place fruit mix in pie shell, top with crumble. Bake for 15 min @ 425 degrees then lower oven to 350 degrees and contine baking until fruit is bubbly and top is golden brown. approx 30 min.

Serve warm with ice cream, fresh dairy cream or whip cream
