Bakerella's cake truffles and more

I just love cranberries and orange together so made up a batch of muffins.


And here's the "farmgirl bling" a nice orange glaze for the tops.

Just the right amount to even the tart cranberries out.  I do put my cranberries thru a quick trip in the food processor as I dont like too big of chunks in the muffins or in cakes so this gives em a nice rough chop.

I made a quick cinnamon, brown sugar and butter struesel topping for them.    And since finding BAKERELLA  last year I love making her cake pops!! I havent had much luck with them staying on the sticks so instead decided to do some cake truffles instead.  That way they will travel to shows and market much better packaged in the little candy cups and in boxes.  so here are 4 pans ready for the oven.

 
After baking and cooling off I chopped up the cakes and put them in the freezer before shaping. 

Here's the cake after adding a homemade cream cheese frosting.  Yepper she suggested using your hands to do this and it makes all the difference to get that frosting competely mixed in. Wearing gloves makes it easy peasy too, I didnt care for rolling them out by hand so I relied on my trusty cookie scoop.  This is the middle size scoop and makes the perfect bite size rounds.   


2 batches made today, an  orange creamsicle, orange cake with vanilla pudding and the other is dark chocolate cake with choc pudding.  both have cream cheese frosting in them and they will be dipped in chocolate.  I am thinking of dipping the orange cake in white chocolate with maybe some orange drizzeled ontop and then the chocolate will be dipped in choc with white choc drizzeled ontop.  They are in the freezer at the kitchen waiting to be dipped.  IT is best to let them freeze up before dippin. 
Chocolate chip and peanut butter sandwich cookies were made and also some of my orange marmalade filled kolachy cookies.  I am taking some things to a store today and see how that goes!!  hopefully they will have luck with everything. 
And here's the pan of kolachy before bakin, they are not exempt for my "farmgirl bling" either they get a very generous dose of powdered sugar after cooling.  These are my grandma Rose's recipe that my mom and I make every year to put on our christmas cookie trays.  Speakin of we need to start gettin things in order for them xmas is right around the corner and we deliver trays of asst cookies and some candies to friends and businesses that deal with us.  And of cource the mailman gets a surprise in the mailbox, the trash guy, neighbors and family!!  Typically we make up about 15 kinds of cookies, some toffee and some barks and this year we will add maybe some mini muffins or a little loaf of a sweet bread too. 
I always look forward to holiday baking and experimenting with making up the trays and tins full.  I am gonna make some up for the shows in the next few weeks too.  While at Michaels and Hobby Lobby friday I found some great printed up holiday goodie boxes and bags so bought way too much but love that kind of stuff!! and it makes such nice gifts.  I would so rather have a gift that was handmade than something store bought.  We look forward to my mother and father in laws candy they give us each year so much!!  Yes I even like to recieve food gifts from others!  LOL  Lots to get done today, I have 4 more snowmen signs to finish up and then work on a sign that a friend ordered, go and dip the truffles,  make up some cookie doughs for next week markets and deliver an order and then maybe relax!!  LOL.  It is startin to cool off too and we are expecting rain sometime today too so good day to work inside!!

Peach upside down cake, pickles and muffin day

WHEW!! what a busy day~
  I am hoping the weathermen are wrong about tomorrow!!  I baked alot for market and really dont want it to get all soggy and me too!!  They were calling for more storms and windy and rain in am but you just never know here in MI!! fingers crossed!! I can handle some rain but it really chases the customers away and can be quite miserable~!  So heres a peek at my pickles I got done yesterday.  I love the way the polish ones look in the jars with all the dill and red peppers!  
I found this great gingham paper at Hobby Lobby (my favo store) I am there quite regularly and dont know if I mentioned or not but have been in their scrappin magazine a couple of times now!!  gee gotta work on a valentines day project for the 2011first quarter  magazine now!  Anyway I was so excited as they were having their paper sale so I stocked up on all the ginghams I could~!~ it came in red, green, yellow, blue, black, and orange!~! my bins are so full of papers but hey a scrappin gal can NEVER NEVER NEVER have enough papers!! HUH!~! LOL
Ok so here is an awesome new favo of mine "peach upside down cake" with  my own personal changes made to a perfect Martha Stewart cake recipe.
flipped over to reveal the beautiful peach slices along the top of cake!~  I will scale this down to make one cake for yall and post that recipe.Lots of muffins today!! These are my crunchy oat topped banana muffins, with or without nuts. Another favo for sure~ pumpkin cranberry muffins!! I was so wanting to add some of my 'farmgirl bling" to them but resisted temptation!!  gotta have some healthy not calorie filled goodies~~ somewhat healthy anyway!  Ok OK OK just as I packaged the muffins up I added just a bit of my "bling" just a dusting of powderd sugar and that made them POP~~ perfect touch~  So I also got the pumpkin spice bread done, some loaded carrot muffins, some gingersnap cookies, lavander shortbread cookies, some banana bread, my cranberry lemon pecan sandwich cookies and some cardamom crumb cakes.
OH and ps!~!!~ SURVIVOR is on it's new night~!~ I am off to watch my recorded desperate housewives show before hubby gets home!~ HEE HEE i know it is crazy but I am so so addicted to that show and am watching all the reruns to get up to date for when the show premiers for the new season!! LOL
LOVE all those women!! but Susan is my favo!!

Baking and market

So yesterday was ALLEGAN MI farmers market!! ALL I can say is a huge THANK YOU !! to all my customers and everyone that did come out!!!! IT was a great day!! the best part all the vendors/farmers there were all local to allegan and raise their own produce, plants and treats!!!
I was able to get my hot little working hands on a gorgeous 29 pounds of fresh rhubarb!!! THANKS SUSAN!!  My rhubarb is still goin strong but I am wanting it to reseed so I am not pickin anymore.   So today is gonna be a rhubarb jelly making day!!  and also for market next week some old fashioned farmhouse rhubarb treats!!

Here is a bit of a tutorial on making ravioli
Roll the sheet of dough thin using the pasta machine run it thru to the last thinnest setting.  Place ontop of ravioli mold, using the indentation form press lightly.
Using a pastry bag and large star tip I piped some of the filling into each mold then topped it with another sheet of dough.   Using a rolling pin roll ontop of mold to press the grooves into dough and cut each square.   Flip upside down to push the ravioli out of mold.
And here they are!!    One thing I did this week was made an extra batch of dough layered between sheets of film, then took out just before making them.  As the dough thawed which only took a couple of minutes it did get a bit sticky, I just brushed it with a tiny tiny bit of flour then placed on top of mold.   Now if you dont have a mold you could certainly roll the sheets place filling then top and use a pizza cutter or pastry wheel to cut each square to any size.  The good thing about using the pasta maker is the sheets come out just a bit bigger than the mold, I just froze all the scraps then took them out as needed for supper.  Egg noodles are yummy with a bit of butter and salt and pepper and makes a great side dish.      Butter crumb topped blueberry muffins.  THESE are the best muffins!!   Customers came back and bought a couple after tasting them. Nekked lemon buttermilk cakes with blueberriesGolden cinnamon bread loaf, one thing I will note is to add more cinnamon sugar inside the bread.  When done baking to 200 degrees I brushed each loaf with melted butter and sprinkeled cinnamon sugar ontop. Inside of one of the lemon buttermilk blueberry cakes.  Tomorrow there is a 70% chance of rain so not sure if I am gonna do market in south haven.  I have an order for some jellies and will probably work on them this weekend.   Plus I need to work on my recipe books as I have someone starting next week to help me bake! YEAH!! maybe I will finally get more time to try and experiment new things!!  Be on the look out for lots of new treats!! savory and sweets!!

Cakes and Breds

Lemon poppyseed muffins with some of my "farmgirl bling".  A lemon flavored glaze get drizzeled ontop of these yummy muffins.  Gosh I think we are gonna have one with dinner tonight they look so good!  Made some banana nut bread, with and without nuts so I added some "bling" to the no nut loaves to tell the difference.     I did get some mixes made up for todays baking and also did up more scones and a batch of cookies that are in fridge waiting for me to roll them out.  That was about it yesterday so today is the main baking day to get everything done!!

Bronson Market Kalamazoo MI

A buttermilk bundt cake filled with red raspberries and blueberries we froze from 09 season. And no bundt would be complete without my "farmgirl bling" LOL

More of my peanut peanut butter cream filled whoopie pies!! I made 5 batches of these yesterday one just for my hubby! he loves these without the cream filling too.
I had a busy day at the kitchen yesterday also made up a few kinds of cookie dough to bake off today. today on the schedule I must get done my glazed pistachio bread, cheddar pepper bread loaves, and Fresh Spinach Pasta!! Pasta has been a big hit at the last markets so am going to keep making that regularly!! I am thinkin though of investing in a maker that will go on my kitchen aide mixer then I could do asst shapes not just the spaghetti or fettucini even though those are great!!
Have you ever had fresh pasta?? Gosh it is delic!!! I cant believe the difference now to get hubby to try it. We would probably eat alot more but we are just not big fans of dried tasteless noodles!! BUTTTTTTTT now we have flavor and a wonderful texture in fresh. And we both love spinach so I will be putting more of in this year just for our pasta!!

Friday is Market at BRONSON HOSPITAL in KALAMAZOO MI! 10.30-2.00 stop on by for some great foodies and winter produce and more!!

HEY YALL!!





Whew.................. market yesterday was a great success!! A dear friend and great baker at that helped me this week!! she came to market yesterday and we laughed and laughed and had a ton of fun!! It got pretty busy with a line up in the farm booth!! The hens were a cacklin too!!LOL anyway we sold out of quite a few goodies so this week will be busy testing out new recipes and baking. I am tryin hard to make new things and have a few of the tried and true ones everyone loves ex: my glazed pistachio bread, lemon poppy seed bread, my loaded old fashioned carrot cakes with cream cheese frosting and of cource my cowgirl and cowboy cookies!!

Some of my chunky sof-n-chewy peanut peanut butter cookies OH NOW how about a chunky monkey cookie?? I just got an idea for a new recipe to try!!! Will take pics of that one this week! gotta write it in my little light bulb idea book!! LOL


I have to tell you I tried a new recipe I found for banana cake!! YUMMO!! I tweeked it a bit around to serve this chick better and it was a big hit! had some small cakes and some mini bundt cakes topped with powdered sugar and they sold quick. I am really into nanner things lately did naner muffins with and without nuts, the naner cakes, nanner nut bread loaves and also blueberry nanner bread!!

SO today hubby and I are planting some of my heirloom tomato plants that are outgrowing their little homes, we have more taters goin in, and beans!~ yummy purple, yellow and green beans~So off to get my bibs on and braid my hair and get in the garden~~ Oh and I just thought of another fun idea for a mixed granola~!~ will post all about it when it is done!!
